Easy to Make Banana Pudding Cake
Hi all! It has been a while but I am so glad to jump back in from my writing hiatus in the SWEETEST way possible – dropping the recipe to my “top secret” Banana Pudding Cake.
You read that right. Banana pudding, but make it a cake. Simple and delicious. Haters will say it’s not made from scratch – and it’s not. And that’s ok with me. So as long as it’s ok with you too, LET’S GET TO BAKING!
Start with a box of yellow cake – any brand will do. If you have a from scratch yellow cake recipe that’s to die for, PLEASE drop it below so I can try it next time and we can make the cosmos align!
Make two round 9” cakes, and set them aside to cool. (You’ll notice that mine cracked because I flipped them onto the cooling rack before they were cool. Totally ok.)
In the meantime, make two boxes of boxed banana cream flavored Jell-O pudding. Put that mixing bowl in the refrigerator to harden.
In a separate mixing bowl, use a hand mixer or a stand mixer to whip together two boxes of cream cheese (your preferred brand), and one can of sweetened condensed milk.
Once the pudding is ready, pull it from the fridge. Fold in one container of cool whip (I didn’t have the container so I just winged about the same amount from the spray can).
Now that you have your two mixed bowls, fold one into the other. Doesn’t matter which one is the fold-ee.
Using a straw, poke holes into your cakes. This is key because we want the pudding to soak into the cake – like a thick version of tres leches! Once that is done, it’s time to layer.
Stack as follows:
Cake
Pudding
Nilla Wafers
Banana Slices
Pudding
-Repeat-
Once your final layer of pudding is on, make sure to use a layer of pudding to “ice” the rest of your cake. I used a double stack of Nilla wafers to line the outside, and added some whipped cream puffs with Nillas in the middle to decorate the top. Finally, drizzle caramel sauce over the entire cake.
